How does this differ than the more expensive ones at $5k+?

Well in the features we are interested in
Lower resolution, No video output.

It compensates for the lower resolution by having a narrow FOV, 12degrees.
So basically a crop of a the image you would get from a higher res one.
If you want to see more, pan it around. 8)

Of course you can use it for boring stuff like thermal house inspections,

I have been reading a lot on the Flir i3 camera…I am a final year Electrical and Electronic Engineering student at the University of Auckland, and my team has been selected to take part in a global technology competition known as the Microsoft Imagine Cup. I read your comment about whether or not we can borrow the camera to see its functionality further, and I would really appreciate it if you could allow me and my group to borrow the camera for even a day. We will definitely put any collateral if required, and I assure you will take good care of the camera. Our idea requires that we process each image sent out from the camera for further analysis.
