Is it really needed for glue to be involved? I would really rather not use it.
Not really. You do need to hold the leather securely in alignment during the stitching process, so that the holes you punch with your awl stay in the right place - but you can use clamps instead. I use glue because its easy and I have it to hand (and ADOS works better than hot-glue).
I will just try it, if it fails… well, I can always say my character tried to make it himself XD, that always works, right?
You can always try tying it - this (EBay) seems to use long strips, which are then tied together through the cover in an attractive pattern.
It looks as though that book/journal has the same binding as I planned at first, as in, the leather straps penetrate straight through the leather cover and the paper.

One thing though… How water-proof is rain? Cause paper + rain is no good at all, and I havent done a single LARP yet where it didnt rain at some point XD.
My plan now was to make a bag from the remaining leather I have. But if the leather isnt weather proof, I would have to find some other solution… (Maybe line the inside with a plastic bag? xD)

Leather is pretty waterproof I think - at least enough that a shower wouldn’t bother it overly much. You wouldn’t want to leave it out in a full on downpour though

It will depend on the treatment of the leather, and how watertight the seams are. Thin soft leather without any kind of coating isn’t waterproof. But if that’s the kind you got, you can always get some dubbin or beeswax from a shoe shop and treat it the same way you would a pair of boots.
